Cooking with Ceylon cinnamon

It is more delicate than the cinnamon most recipes assume, which changes where it works best.

Where it works

Four ways to start

01

Infusions

A whole quill in hot milk, tea or coffee gives a rounder result than powder, which tends to sit on the surface. Let it steep rather than boil.

02

Rice and curries

A quill goes into the oil at the start with the other whole spices, and stays in the pot. In Sri Lankan cooking this is at least as common as any sweet use.

03

Poaching fruit

Pears, quinces, apples and plums all take cinnamon well. Ceylon is subtle enough to use generously without it taking over.

04

Baking

Expect Ceylon to read as gentler than the cinnamon a recipe was written for. That is usually an improvement in something delicate, and a loss in something built around heavy spicing.
